Nutrition Micro-credential

The nutrition micro-credential offers an introduction into the principles of healthy living, teaches students to apply them to the education of individuals and communities, and provides a chance to develop administrative, ethical, and professional skills that are relevant to leadership positions in the increasingly diverse nutritional field. Students who complete this credential have demonstrated their ability to: ● Examine the basic principles of food safety, microbiology, and sanitation related to providing safe food ● Assess the nutritional status of individuals ● Apply nutrition assessment results to a nutrition intervention plan in healthy people as well as those with a chronic disease ● Discuss analytical strategies, planning, implementation, and assessment of progress of nutrition therapy for individual clients ● Explore the scientific foundation of foods through weekly in-home kitchen preparation of specific recipes that demonstrate the scientific properties of foods
